My other fix is Star Traders: Frontiers. It's big on crew management and ship design, with a sort of emergent political conflict as well as optional stories and "storylets." There's no real endgame past certain stories, so you just go and do whatever, but there's a lot of different gameplay styles.
I've also got a few things in my wishlist I need to explore, but uh . . . between Approaching Infinity and Star Traders: Frontiers I kinda have a lot of space exploration ;)
