given your description, you might try lowering your steering sensitivity to around 30-50, up the stability assist to around 20-30, and try a countersteer factor of 100.
of course as each person may drive differently, finding balance and comfort in different setups, consider my suggestion as something to try, rather than gospel, but it may put you on a path to find what works best for you.
reducing steering sensitivity may help reduce initial or snap oversteer.
having a little stability assist may help with mid-corner grip.
a countersteer factor of 100 may help reduce fishtailing from over correction.
lastly, each car in art of rally is its own beast, and they all drive differently. so if you're not getting along with one, mix it up. with many options in each class, one will be to taste. :)
