in control options select joystick then advanced options and add 5% deadzone to steering.
hopefully that'll help a bit.
What also helps is leaving the game for some hours and picking it back up, you really notice that the steering is getting better. Hope you will find a stable car!

Leave brake and accelerator at 100% sensitivity for instant response. Turn off all driving aids except oversteer correction at 50%. Use view camera 1 or 2 for a more behind car view. Use an easy to handle group 2 car such as the Alpine A110 "la montaine" as it will slide more gracefully into corners with lift throttle / braking oversteer as well as exit more gracefully through power oversteer.
And last, practice, practice, practice. I'm 2.5hrs in now and my driving ability has probably doubled. Getting top 100 times for now until the pros get here.
