To get started, you'll want to use... bspsrc I think to decompile the map from the .bsp you have to the file (vtf or vmf or something) that the hammer world editor wants to use. Once you've finished messing with the map, if you select "run map" it will automatically generate a bsp file, which is what you need to put in your vpk. To get the missions and addons file info, try decompiling someone else's custom map just to copy their txt files as templates.
It's not exactly simple, but it's not terribly difficult either.
Decompiling is not pefect, and you may have to fix errors that creep in from the decompile process if there are any. After modifying the map, and compiling, you will likely have to rebuild the entire Nav mesh.
The easiest way to start learning about map making is youtube and google. There are plenty of tutorial videos (some better than others) on how to build various parts of levels. As well as a number of web sites dedicated to map building.
I've been following the basic tutorials from the dev wiki and starting to learn there, but I will look up some guides on youtube as well.
