While not a "Gore Mod" entirely, мяFunreal's Particle Overhaul Collection may prove to be a satisfactory alteration as it has been for myself ('Blood' & 'Boomer' specifically for your criteria, but I find the 'Environment' & 'Fireworks' to be very pretty):

You'll likely be served well enough by just using the search term "Gore" or "Blood" in the Workshop search bar & filtering by "Relevance" if 7ᴇᴍᴘᴇsᴛᴲ's own options (Besides the aforementioned) don't suit your preferences.

Didn't know this mod was a thing. Was using a different more blood mod. Switching that out for this one.

There's also a headshot mod by Manacat that gives much blood when you successfully do a headshot on a zombie.
