You would use "map <mapname> <modename>". So in this case you would want to do the following:

map c5m1_waterfront spite

That’s one definitive way of playing any mutation offline. Another way is to download my “VS Mutations” addon which will change the drop down menu so that you can start the session via the menu in offline mode
