I did play Ellis modded at first, so I heard his voice only, but the original character grew on me. I also looked up Eric Ladin, his voice actor, and he's a pretty talented dude.
I like all survivors ultimately, but I think the original four are a bit overrated and I like the second four better.
Zoey is punished by Francis for friendly fire screaming ZOOEEEYYYY.
Left 4 Dead 2: Coach because "get your as$ movin Nick" and "MOTHERF-"
In L4D2, I like Ellis for precisely the opposite reason; he's a lovable, dorky hayseed with loads of memorable lines and it really fits the theme of the game. Also I want to motorboat his pecs.
It can be informed through his dialogue - while healing, he'll say he's done it before... f he kills the wedding witch in the Passing he'll say it isn't easy to get blood from a wedding dress... in Swamp Fever he states that he knows that brains come out of a suit but swamp water doesn't... he'll casually tell greviously-wounded allies that he's seen worse before, he'll mutter something about bringing back some good memories when he picks up a crowbar or an axe...
It's subtle, but it all points to one thing: Nick has done and seen some proper f***ed up things in his life.
