I think, you are a beginner, because of that I give you help.
-There are 3 difficult level fot the AIs: beginner, veteran, expert.
Beginners should choose beginner.
-A dice has 6 sides, because of that there are 36 abilities for two dices:
"2"+"12" one abilty, "3"+"11" two abilities, "4"+"10" three, "5"+"9" four, "6"+"8" five, "7" six.
Because of that: "6" is a good number", "12" a bad. "8" is better than "11" and "12".
-In a large number of games the statistic shows this distribution. But in ONE game not. Perthaps in one game "11" comes very often, "8" rare. In the other "11" comes never, "4" often. Because of that some people talk about "manipulated dices", but that´s nonsense (Hello s...storm!).
-You can choice "cards" instead of "dices". In the game you see rolling dices, but the results are more statistical. "8" and "6" will come often, "2" and "12" rare.
-Trading: The AIs are very stupid (although experts).(Please don´t tell it Candamir!) Often you can get two resources for one.
All beginning is hard, experience makes the expert. Try again.
As I have seen it, the AI is better than in former times. Sometimes in C&K they made really artful maneuvres. I love that to have strong enemies, also I was very angry
Since I play again, first I loosed "First Island", won 24 games, loosed "Through desert", won the last six. All games single player with expert AI.
Ok, I AM good (diamond). But this wouldn´t be possible if the game would be "rigged" as you describe it.
The problem for devs is to make a game
-enough hard for players like me (playing Catan since nearly 30 years)
-not to frustrating for beginners
You can´t get the experience of nearly 30 years in a few months. Perhaps it would be better for you, playing a while on "Veteran". Or play "multiplayer" against humans. There you meet all, the old wolfs, the greenhorns, all.

!!! I choosed the option "cards instead of dices", perhaps is this the solution for you all.

The cards have the same distribution, but all of that 2times. After the half of the cards, a new card pile will be mixed. - It is possible that a number never comes, or a number very often. But seen over the whole game, the distribution is more balanced.
