Without any DLC's, there's more than 4 ships for the Colonials. Off the bat you get access to the following:
Manticore - Recon/pack hunter.
Adamant - Jack of all trades light cruiser/carrier.
Minotaur - Gunship.
Ranger - Missile cruiser.
Atlas - Heavily armoured carrier, AKA the brick.
Artemis - Cheapest, but also most cost-efficient Battlestar. Ship design is a modern version of the OG Galactica from the 70's.
Jupiter Mk I - Heavy Battlestar, bristling with guns and armour with the best flak you can get, though slow. Ship design is an early version of the Galacitca from the re-imagined show from 2003.
Again, in my minds eye, it premises the galactica, imagine my disappointment.
If you play through the campaigns, you also get to use the Galactica itself. I really don't know how much more Galactica it could get.
. . and of course the Original Pegasus from the Original series is simply another Artemis.
So yes. . .you CAN have the Galactica AND the Pegasus fighting side by side.
