As for the Valkyrie, we may see that in the game in the future. I believe it is a late-war design.
The Mercury is a fairly new design by the time of rBSG and Pegasus was one of the most advanced in the colonial fleet, so it is likely to be new or fairly new. Compared to the Galactica, the Pegasus could wipe the floor with the Galactica in capability almost certainly if we are going on about advancements in weapons, armour, technology and all round capability. The Galactica was a relic just before the fall and was due to be mothballed.
The Valkyrie is one of the cylon war era capital ships, so it will show up almost certainly. however it will likely be relegated to being a heavy carrier than a battlestar, and it will probably only have point defense systems than anything really offensive in capability, aside from missiles.
We might see it, Galactica and others in the ghost fleet towards the end of the cylon war on deadlock, and perhaps before that with the Battle of Canceron prime as well, if that battle isn't already in the game.
