Are viper mk2s worth it? they have less life and less squadron size?

Yes. More damage, more speed, and more Evasion, which is basically a multiplier to health.

Evasion is handled by the ship carrying the squad, as far as I'm aware no squadrons have evasion built into them.

That being said, Viper Mk 2's are significantly better than Mk 1's due to much better accuracy, rate of fire and speed. They are worth grabbing whenever possible.

Really? I assumed they had an evasion boost from their description in the blueprints which mentions it a few times.

Nah, but if you want to look at it from another perspective, their extra speed does increase their survivability a lot due to how dogfights work. I explained it in a big post in another thread.
