Sorry to hear you having problem with extra players. We have heard similar stories, and ultimately it comes down to having "phantom" controllers plugged in (I.e. windows thinks there are more game controllers connected than there really are).

Please let us know if you have any further issues with the above fix. We have some plans to try and detect that a controller is phantom, however it runs the risk of reducing support for some other controllers.

For example:
I am trying to play alone with my controller.
The game thinks there is a second player (my mouse) and also adds 2 AI players.
Another example:
We want to play some fun rounds with three controllers. There is a 4th player just laying around (the mouse) doing nothing which makes some gamemodes unplayable.
The solution is not that you detect ghost controllers but add an option to specify which controller / player is being used. Look at how the games "Screencheat" and "Rocket League" have implemented their Couch-Coop. Its perfect.
In fact the player issue is the only reason for me to not recommend your otherwise brilliant game, yet. It makes coop with less than 4 players frustrating to use, and frustration should not be around on parties.
We're aware that adding and removing players doesn't match what other games currently implement - we currently detect the existence of a controller or not and don't handle which order the controllers are assigned.
For the case where the mouse is "just laying around", you can utilise the "Assign Mouse to Final Player Slot" option in the Settings screen (the menu may be /incorrectly/ saying that this is turned off when it is actually on, so try toggling the option a few times until it is off), and this will remove the mouse player when you only want 3 players. This was intended to be off by default so that players with controllers wouldn't be interrupted by the mouse as you have described, but it isn't - we plan on patching this soon.
We will take into consideration your (valid) comments about player/controller assignment, and do our best to work out a good solution for this (the game was originally coded for the PS4, where controller issues like there was basically non-existant).
