Hard to believe but you can't. They removed full screen with an update for some reason and never added it back despite saying they would more than 6 years ago.

I really want full screen for this one, it's one of my favs and the fact there's a seemingly simple fullscreen button in the game settings for both Paradise and Hotel but not Roots is really disappointing. :(
