Which production method do you dislike? It's impossible to control the colony to such level.
They build whole colony with Power plant with sub just for wood saw.X)
There is a difference between colonies and puppets.
In a colony you can build your own stuff using your own construction sectors, in a puppet state the local government decides what to build using their construction. Therefore I asssume you mean puppet instead of colony.
In Victoria 3 you can switch the Nation you play. So if your puppet is not building the plantations you want, switch to them, add them to the construction queue and then switch back. You can also increase demand for the good and hope that the puppet will react to increasing market prices. Or you can decrease autonomy and take over the puppet with time, however then you will loose the free 10 or so construction per week for the puppet.
A colony could as well be a puppet state formed through the "establish colonial administration" decision. It's absolutely clear that OP meant an AI-controlled subject. There was no need for that pedantry.
Switching states disables achievements. Why would you even recommend that? Besides, the AI will simply delete stuff it deems "unprofitable".
