New to game, how to get more middle and upper strata / capitalists
Game says upper strata are Aristocrats and Capitalists.
Middle Strata are like Officers, shopkeepers etc.

How do I get more of 'em?
If I have a farm, does that mean the owner is a capitalist? And if I build another or upgrade the farm, I get more farms = more capitalists = bigger upper strata?

Why would you try going against natural pyramid order? There will alway's be waaaay less upper strata people than middle and the lowest will alway's be the most. And no, not alway's do capitalists own farms. Thats where your law's come in. You would need factory's that make a profit for capitalists to actualy exist. And then again, its mostly your law's enabling them. I 99.9% of my time play as japan and have little to no capitalists and i am an industrial powerhouse.
you can mouse over everything to see what it does. Generally factories will provide more higher end jobs than farms or mines, but it can depend on the production methods.
Technology and production methods. Modernising production methods will switch jobs from low paid laborer work to higher paid work like mechanics. Switching from private ownership to public trading will increase the number of capitalists.

Farms in general use Aristocrats rather than capitalists. Might not be an important distinction for you as they are both upper class, but it can matter depending on what economic law you are using.
Buildings employ people, including owners. You can hover over the right most production method when you are in a building page. This is the ownership production method and determines who owns the buildings and gets the profits. This can be changed, or will change automatically, depending on the other production methods the building is using, and also sometimes depending on what technology and laws you have.
Landowners and Aristocrats (both of whom are in the Landowners IG) most likely own your farms and the like, with some contribution to the Investment Pool from them. In V3 Landowner is almost another name for Aristocrats.

Also Interventionism (economic) Law allows Investment Pool to be spent in helping construct many rural farms/buildings, etc. while switching to Laissez-Faire Law changes things so that Capitalists start contributing more to the Investment Pool, and many farm buildings can not be built with Investment Pool funds. Some such as Dyes and Rubber still can be built from the Investment Pool, but those go directly into feeding the Industries, unlike the food related productions.

Look carefully at the differences between the two Economic Laws on the workers, owners, profits, SOL, Investment Pool contributions, and the buildings that can be built from the Investment Pool. As well of course, on the various IGs in your country and the Laws and Institutions that they support/oppose.

Landowner/Aristocrats and Industrialists/Capitalists are separate IGs in most or all Countries, and the Laws and Policies that they support/oppose can be very different, as well as how their Political Clout changes as your country develops/industrializes..
