How can I gain prestige as Switzerland for example without having to build(spam) hundreds of barracks? feels like Prestige can only be gained through Military Power

various events can give you some but yeah unlike Vicky 1 with prestige techs here it's more dependent on power projection indeed.

Army, GDP, being a lead producer, events those are really the only ways

Doing expeditions in Congo, finding the source of Nile and mapping America decissions also generate prestige.

you can also try and produce enough of a product to get into the top 3 worldwide producers. Although this might be tricky as switzerland, i guess.

being a lead producer gives a one time prestige bonus that only stays as long as you are still the lead producer there is points for 1st, 2nd and 3rd place
1st giving 12+
2nd giving 8+
3rd 4+

Lead producer prestige bonus is based on the type of product. E.g. it is more prestigious to be the lead producer in fine art vs wood

What about subjects like protaratices? Do you can any prestige from them or is conquest the only real way.

make money, have spare money? not enough spare money to invest back into industry? invest into military, seriously dont worry too hard about prestige, mainly focus on building a good economy so you can handle having a big army.

Yes exactly this. I ignore rank and prestige until I’ve developed my economy and then I start arms race. After that and a few late game wars you’ll be drowning in prestige.

yep pretty much how the game just is, a good way of blowing up your economy fast is just having tons of colonies that are resource rich or have lots of arable land

then you can use those resources or if you have many spare you can export them to countries larger than you that will probably need those resources, quick and easy money :p
