Report a translation problem
From there scroll down to the resource you are trading in and select it, it will show all the trade routes you are participating in for that resource and there should be a [X] button to the right of the trade route that you can press to cancel a route.
As others have said if another country has started a route you cannot cancel these. But you can control tariffs per resource so you can "protect domestic supply" or something which will increase tariffs on foreign goods which will mean the ai shouldn't want to trade that resource to or from you,
