Option 1: Riot Guard. He gets access to an extremely powerful loadout (stun grenade, methadone, shielded, I-Frame), an additional weapon (while not being good, it's helpful to have it) and his class core gives him a lot of health regen. Additionally beating the final boss with him gives all classes 2 health regen which makes everything easier.
Option 2: Heavy Gunner. His talents and items give him very easily accessible dps and ammo, which both are often problems for beginners. Very powerful preloop, then he drops like a hot stone.
Option 3: Breacher. Maybe seems counter-intuitive to recommend, but he is by far the strongest class in the early game and the only class with a comprehensive guide on it (https://steamcommunity.com/sharedfiles/filedetails/?id=2347954928) so he has that going for him.

Yes, you assumed correctly, I just want to survive the Armageddon Chamber.
- Riot guard. Gets stacking regen from combat, and is primed for stunning enemies. Easier to survive when enemies can't shoot back.
- Breacher. Can carry 4 plating and gets very high health regen + plating at low health. Also has high movespeed for avoiding bullets.
- Raider. Has dash I-frames by default. Predict your enemies and you can dodge anything, even explosions. Also has high movespeed.
- Engineer. Starts with one ally turret, with choice of more at loadout. Allies take the heat of combat off of you and you can shoot back while the enemy is distracted.
Assassin with the 2x dodge skills. Shadow dance and Evasive Dodge I think they are called. Switch positions is also not a bad shout. All body upgrades that provide a chance for dodge and recycling your cloak item for an additional 10 dodge before the boss. If you get a semi decent weapon and keep moving you should be able to take the boss down.
Raider has 2x dodge. This is crazy good on the last boss. I normally go specialised ammo and the one that gives an accuracy drop but provides extra money. With this you get loads of money for items, upgrading your upgrade kits to 12-15% chance to use them twice. High crit damage to eat through the last boss.
I do suggest winning with the riot guard to unlock the +2hp regen for all characters.
As for the suggestion above about using the heavy gunner. I actually found him the worst of all on the last boss. He was my last character to defeat the last boss and I must have died on him 5 times before getting it. Movement speed on the last boss is key. With the heavy gunner I ended up getting rid of his right mouse click ammo regen item because it slows you to a crawl and would get me killed on the last boss.
Also the upgrade kit, +2% damage for each 100hp the boss has or something. I normally take this if it is a gun i think is going to go the distance. And something to consider based on the weapon you want to main on the boss, the reload heat vent. This upgrade is very useful for unloading, reloading and setting heat to zero and going again. If you have that one super weapon for boss killing, this will keep you going until it is dead or you run out of ammo and hope your second weapon can finish it.

For your problems with HG I must say that those are on you, not the class. Sure, HGs base movespeed + the slowdown from an lmg + the onlsaught system + just natural firing slowdown sure make him really slow. But you can easily fix that by running routine which massively boosts movespeed and by not using lmgs. Then add stim pack to the mix and you're set. The onslaught system also fires missiles which slow the boss down, so you REALLY shouldn't have problems with speed.
