One-character parties?
Is a solo character viable? Does the game adjust? How do you win?

I haven't tried, so I can only tell you what it says when you're about to make a solo character game:
"Solo character adventures are extremely difficult and only recommended for experienced players"
(inexact quote)

So it sounds like it's possible but difficult.

You'll get to max level very quickly, as well as accumulate a lot of gold very quickly, but in my one attempt, it was all but impossible.

There other threads around the topic. But in short: it is more difficult than playing on two or three characters. Yes, the game accounts for the amount of players in various ways - but, it‘s still harder.

The focus in playing a single character game shifts towards moving around the map as quickly and efficient as possible. I for example tend to use focus more often for movement rather than in battle.

Right now, when you‘re playing such a solo run, you mustn‘t die, even if you have life-points left. Once you die it‘s game over. This forces you to maybe play a bit safer than you otherwise usually might, all while you really can‘t because time is a greater factor! But you win the same way you‘d otherwise win. (The story stays the same)

So if you‘re comfortable with atleast journeyman difficulty and just getting started with a one-character-run, I’d recommend you play on apprentice first. If you find yourself being too heavily pressured by chaos, move it back in the house rules to what you are capable or comfortable playing with.

What class would you recommend on solo runs?

A Hunter orTtrapper would probably work best. Vitality Blacksmith is ok for it but very high evasion works best when you are alone in my opinion.

Regardless of your class, I would recommend that you ensure you get immunity to shock.

I did a Solo run a number of months back, but I used the mod the reduce chaos timer to make it manageable. I used a trapper to make sure i wasn't ambushed, it was quite difficult but also fun
