See the thing is that I couldnt do anything, I didnt get a turn to taunt or fight back. On his first turn he ran away, so I pretty much got to watch a 30 second clip of losing 300 gold.
The game gives you enough time to grind enemies for equipment and gold assuming you are proactively dealing with the chaos and not progressing the story. Progressing the main objectives can sometimes be detrimental because the price of services and shop are inflated each phase of the story. So take your time and do -1 chaos quests and cult devices, you'll have lots of time to prepare yourself for each new main objective.
On solo play you have option to not select the defend option (exit game, reload last save).
As for ocean travels, you can do the hand off to next person method before starting your turn/move. Give your gold to the previous person who just ended their turn before you move.
Also having a high evasion helps when they pop up (when you have to use the defend option).
Having decent/high evasion also helps when they pop up. Evasion (if RNG is in your favor) can help negate the steal (but your evasion rolls wont hold out much longer).
