Plus there's very few unavoidable attacks.
- Regular attacks from small enemies can be outrun at the right time, so they will only hit air (plus you can stun lock them)
- Regular attacks from large enemies always have long animations, so you should be fine if you're not too greedy and pay attention
- Spells can be outrun easily (they only land when the red circle catches you)
- Skills can be interrupted by your weapon skills
other then the doppelganger and a couple of bosses, I can't remember any attack I couldn't get out of the way, so I don't think the game could have a dodge mechanic without A LOT of changes to the monsters as well.
