On a lesser note: character aesthetic matters too, to some extent.
One more thing: Maybe you can try them out in Dojo > Combo. The points above are also important, but personally I think you should as well pick someone whose execution you're comfortable doing. Execution-wise, I'm sticking with Baiken because I can't do DP motions (623) very well, and she doesn't have a lot of those (aside from Youzansen). I'm trying to get into playing Dizzy for a change, but it seems very hard to do so.
I know the first time I played Ramlethal (not the best starting choice now that I think about it) I was like, yep, I'm playing this. Then I picked up Leo, wasn't sure about the stance thing but he doesn't have any difficult input so he's great to begin.
Play who you like. Explore roster try out each move of character you are interested in and if you have no idea how does given move functions go http://www.dustloop.com/wiki/index.php?title=Main_Page and ask on dustloop forums.
Its easier to learn game while playing somebody you like than using beginner friendly character who doesnt clicks with you at all.
While some poples are convinced that by picking certain characters in certain games you might develop bad habits I wouldnt worried about it. It is exaggerated and if you move to another character you will manage to adopt.
