Character attributes:

Spike and Shot Accuracy: The ball will land much closer to the field boundaries(e.g.: if you are targeting at the left back corner, the ball will land closer to that corner).
Your shots/spikes will also have more spin when this attribute is trained - thus enabling your character to hit harder when you are far away from the net. Shots with more spin will drop to the ground faster. You will not notice much difference if you are just shooting at the center but this is generally not advisable because your attacks will then be very easy to defend.
Setting: Sets will be more precise but having this attribute trained will also enable your character to make good sets from much farther away. This is a great advantage because even if the reception was bad and the ball is far off the net, your character will be able to set the ball perfectly in front of the net.
Defense: Your character will be able to pass difficult serves(float serves, and fast jump serves) more close to the net. It will also be able to receive hard spikes better.
Training this attribute will have a great effect on your diving skills(get the ball higher up into the air with more precision).
Blocking: Provided your character has a high enough reach, it will be able to reach for a spike much farther away from the body center(to the left or right).The attacks will be deflected in a steeper angle - making it harder for your opponents to recover a block. Also your blocking jumping height/reach will be increased.
Service: Serves will be more precise (will land closer to the boundary lines). Jump serves & top spin serves will be faster with more spin, and float serves will have less spin(making their movement more unpredictable)

Diving
To be able to dive your character should have at least 15 defense training points(percent)- it also helps if you have more, because the player then is able to hit the ball with more power and more precision.
To dive you should start pressing the pass button right AFTER the opponent hits the ball(even if you are too far away) while running towards the ball at the same time. If it's possible for the player to reach the ball, the dive move will then be triggered.
Don't press the pass button before the opponent hits the ball - because then no action will be triggered!
Actually it should be possible to train diving in the receive tutorial! The attacker in the receive tutorial always shoots at the center of the court. By intentionally moving far off the center of the court you should be able to train the dive move...
