1 clay camp = 2 pottery factories, the same with sand, iron, gold, etc. Lets say you need to use oil to upgrade Insulae and you need to export it. I would put 8 fields of olives = 4 olive farms = which can provide olives to 8 Olive factories. This works with Clothes and Wines too. If its food you want to max. 6 farms= 12 fields = i would put 2 granaries, 1 near the farms and one near the city, and put more than 1 market, maybe two, i do these because 2 markets would empty those 2 granaries, and if the granaries are empty, they would bring more Raw food from the farms more often. I hope it works.
