What you're running into is probably a few tracks that AI may be better at than others. They do basically play better on some tracks compared to others relative to the players. However, most of this is likely to still be human error.
It's most likely that your main issue is steering too much. You carry a lot of momentum through turns so if you turn rather sharply you slow down a lot (basically for no reason). It's important to get used to the strafing mechanic and productively use it in your steering.

How is using the same power ups you have cheating? I can lap the AI on any track after 5 laps. They defiently dont cheat. Being challenging, which they arent, isnt cheating either.
