it takes 25-45 minutes of real time. but I also think you need to leave the area and come back to his shop for it to update. I have gone to town and back and he was finished without going home and wait for his phone call. (ordered tires, so it was easy to see he was done).

Amount of ingame days/time depend on if you sleep or save a lot.
