err... this is not great indeed...
should fix this one before releasing another... focus.... I know people need the money but I´ll probably not buy nothing again from them until they fix TONS of things on MSC... finish this job first ffs
Thirst/Hunger/Etc. I thought it was a bigger problem for the first couple days I played it. I actually disabled them (with msc editor) but I enabled them after a week or two. I don't mind the mechanics now, they're not that bad. I like to keep a beer in the car, drink pee, drink from sink when I get home/am near water well. A little bit of preparation to do stuff but it's not much IMO.
You mentioned walking/saving/thirst. I try not to walk from location to location generally. Walking takes long, is boring compared to driving, and increases thirst.
There are a lot of empty houses I agree. But I had fun playing 150+ hours, building the car, going to store/fleetaris, modifying car, rebuilding engine, making money, fishing, visiting grandma, driving the drunk home, rally/drag race, a couple achievements, etc. It did get a little boring recently as I had felt like I had done everything. There are others that have 3x as many hours as me though.
There are a couple bugs, nothing that I noticed that bothered me. Also the bug you talk about where you looked through the wall, did you press Q? You look forward by pressing Q, you can look out the window of your car or peak farther into the engine bay by pressing it. What you experienced was not a bug.
Also I think you drove into the swamp/mud area. The area is mud so players just don't drive through the forest/field to get everywhere in 1 minute with 0 risk of dying as opposed to the dirt roads.
I can see the reasons for not liking the game, I actually felt similar within the first day and had thoughts of refunding, but fortunately I didn't.
Import your own music and make the game your own. Take it slow. The car doesn't have to be built the first day, or even the first month.
I'm 360 hours in, I've started over from scratch probably 20 times by now, but I also play with permadeath turned on so I can get those achievements.
Once you get comfortable, try using MSC Editor, maybe turn off the thirst and stuff, again, make the game your own.

Yeah I pressed Q, but I may say it was a bug indeed because I was looking through a solid wall anyway.
Less bad it was really a swamp, bug still ugly anyway
I didn´t ever dream about building the car yet. I was thinking about learning how to live, how to make jobs, buy food, live over a month and MAYBE then trying to build the car. I´m not into building stuff TBH. I´d never buy Car Mechanic Simulator. I bought MSC because of the survival thing, and yeah, drinking (not every 5 minutes) and driving and stuff. The amount of bugs scared me a bit tho.
Forgot to mention that I saw this guy walking near a plantation. I swore at him but he didnt give a toss or looked at me, like he was in a trance. Then I ran till him and punched him, he fell and disappeared! Looked really weird like an unfinished game.
But I got your point, as I said before its not a bad game. But I wish there was less bugs and more fun right at the start.
I counted at least half dozen in 3.7 hours of gameplay. Maybe I´m very unlucky

Tons of player with hundreds of hours played - that counts more to me than any review.
I´ll give it a chance when I have more free time. One can change his mind.
For thirst, i don't get your issue. It doesn't go up that quickly. With any of the game's vehicles, you can make it to a well in time (or carry a beer case if it's not the moped). I guess if you run all the time, it'd go up pretty fast... Since you can't seem to use any vehicle, that'd explain it, i guess. Try the tractor, it's slow but super easy to drive. Read the wiki if you can't figure out how to start it.
And yes, the lack of pausing is annoying sometimes, but this is a game you have to play in bursts of undivided attention. Once you get the wristwatch, you can time your saves so they don't shoot you too far forward in time (saving moves time to the following even hour, save closer to it to maximize in game time). By saving often and efficiently, if you need to get up, you can quit without saving without loosing too much progress.
And yes, of course houses are mostly empty, why would every house be used? You don't interact with everyone in real life. And hell, a large amount of them are actually used, there are 5 which have sewage wells, one where you can deliver firewood, 2 where Jokke can live (he moves during the storyline), one where you can pick up Suski from, one where Uncle Kesseli lives, one where your grandma lives, one is your parent's house, one where you can play ventti, another where Teimo lives, one isTohvakka's farm, one is your parent's island cabin, and one is the groundskeeper's shed. Yes, there's filler homes that you don't interact with, that makes sense, but you actually have interaction with a surprising amount of houses.
Yes, this game is challanging and it's got an annoying learning curve. I recommend backing up your save file and not actually respawn at the church, instead just reload your save and try again until you succeed at doing what you're trying to do. First learn the map, learn how to do jobs to survive, and how to reliably get around. Don't even try to build the car yet. Then, after you're functioning, you can build the car following some guide. After you've got it, it's like riding a bike, you can do it all again easily!
Also, download the save editor. It can make life easier if you do suffer from a bug like loosing an item despite it being inside a vehicle (rarely happens, but it CAN happen) and want to teleport it to you. You can also edit your stats if you think you're going to die (or edit the rate at which they go up if it's really that annoying). It's a very useful tool, nearly essential. It also allows you to backpedal time if you are rushing to a toilet to save but get there like 5 in game minutes too late. I usually just save and rewind time so it spawns me at the time i saved instead.
Anyways I'm here not to say that you are wrong, it's just that every game targets certain type of audience, someone likes it, someone hates it. Look at games like Dota2 or League of Legends, thousands of people invested half of their lives into those games, but personally I hate them more than anything else. Same with MSC, it's a bit different game.
