I believe that it just means that the system requirements are still being worked out.

Bus Simulator 18 is currently in development for PC. If there will be other platforms too hasn't been finally decided yet.

System Requirements have been announced and it says only Windows, but i thought there was going to be a Mac OS release of this game as in Bus Simulator 16, I was wondering if there was going to be a Mac OS and Linux Release and is there going to be an end of support for Windows 10 by 2025...

This simply means that Microsoft planned Windows 10 as the last major version of Windows. Instead of releasing a whole new Windows version every few years they planned to focus on regular major updates (or so called service packs) for the current one. Each service pack extends the live time to a new date in the future.
