So when we see purple guy (Michael) dying in FNAF 3, the reason he has so much blood is one of these two:
1. He, despite rotting, was able to heal himself and made more blood (similar to Dave in the books).
OR 2. The suit and the whole scene was a performance to convince the ghosts they cornered and finished their killer, in order to make them pass away (However this doesn't truly work until the Happiest day happens). I'm more convinced of this one.
Ennard doesn't have a hand in all of this. They didn't modify Michael's body, leaving/adding anything. They just made Mike's body rot.

I personally think choice one is a little more likely, though. The minute you write an undead entity into a story, scientific rules of decomposition have to be bent at least somewhat because you have to have some explanation of how the body can still move, how the brain and heart can still be functioning, etc. So we've seen that the guy in Springtrap still has eyes, but those are an organ very susceptible to decay. If his eyes could somehow still remain intact, it's probably not too much of a stretch to say he had some sort of circulatory system that may have pumped "something like blood" through his body.
As much as scenario #2 makes sense, I don't think it's as likely because if it was that easy to fool the ghosts, they probably should have found their peace and departed immediately after killing Phone Guy, but they didn't. He no doubt bled out and expired like a human being would be expected to and they would have been left with no question as to his fate.

Springtrap's eyes have always been a tough point to deal when theorizing. As you said they are one of the first organs to decompose, so why is the rest of the body in such an awful state and the eyes remain? The fluid pumping wouldn't take place, but then again, zombies mend the scientific rules as you mentioned.
Some people suggested that the eyes were the animatronic's (Spring Bonnie's), but they have veins, a trait that none of the other animatronics had.
I currently believe that the eyes are Michael's own, that they didn't rot because they are not truly made of flesh but some artificial material (however this material is susceptible of rotting like the rest of the body).
Honestly, people are running out of ideas for theories, SL hype is over, and theres no hope for another game. Just look forward to the movie I guess, And move on.
