About achievements
I know nothing about this game. I like to get as many achievements as I can in my games, and it surprised me to notice that most achievements from this game are hidden. Without really spoiling anything, is there a reason for that? What kind of challenges do they encourage?

The hidden ones are just for completion of levels and getting collectibles. You'll probably get most of them just by playing.

Most of the hidden achievements are meant to allow you to challenge yourself or explore the map at a deeper level, and have no effect on completing a normal journey

It's mostly the challenge stages (B-sides and C-sides), along with collectibles.

Should you care: The achievement percentages don't relate to the difficulty of getting them due to assist mode.

Yeah, it's a shame assist mode enables achievements. Anyway, are there many achievements for collecting things I don't even know exist? I heard about crystal hearts and golden strawberries by chance, but the game never points to the existence of the latter, for example.

The near-impossible challenges like golden strawberries and speedruns aren't tied to achievements, thankfully! Just the regular berries, tapes and hearts. Basically if you play the game normally to completion you'll unlock all the achievements, except for 1Up.

Yeah, it's funny how the hardest achievement to figure out is precisely one of the two that aren't hidden.
Just by playing the game normally you'll unlock all of them except for 1UP! and Wow. The former can be inferred through gameplay assuming you trigger a certain thing related to the achievement icon, and the latter is a secret at the very final section of the very final level (which you can go straight to once you reach it, no need to replay the whole level).
If you like platformers you can easily get 100% achievements in under 30 hours. True in-game 100% completion can easily take over 100 hours.
