B-sides are meant to be a challenge for those who are hardcore gamers of not just Celeste, but the entire gaming industry's platformers.

I also dont play it so much per day (like 30min to 90min per day) ... just play it at your pace and as you want.
I believe if you got that far you can do it if you dont focus on the goal (finishing the B side) but doing each individual task (each jump/dash/grab/wavedash) you will get there.
I am stuck at an area where I dont really know yet how to get through but I already learned the positioning and timing setup to use Mr Bighead consistently to jump, my problem is more about how to not return from where I have been while holding for long enough at the wall untill Bighead comes back so I can jump at him, but it is more a matter of time.
If you really want, dont give up, just take your time per day, even if it take long.

Ah... I remember Chapter 3 B-side and C-side. It was a nightmare to me too. I'll try to redo each B-sides and C-sides to remember the mechanics. Guides and Youtube videos also helped me when I had no idea how to do a level or where collectibles (Crystal hearts, strawberries, etc.) were hidden.
I'm not sure if I used the right term, but that's something you learn near the end of the B-side of Chapter 7. You dash vertically to a wall then jump to go higher. There are plenty of these in C-sides and in some areas in Chapter 9 too. It was hard for me to learn at first but it became kinda fun when I got used to it.

Was being the hardest part so far, also because my gamepad was malfunctioning but I found out it was more the USB port it was connected to, but I also could not see for the life of me how to do that without jumping from wall to wall (what now I feel like a total idiot after doing it for not being able to see how I should do it for like over 50min).
Finished the B side with some 1h 40min, around 1h just at this screen.
I dont really remember any specific technique being required for this B side other than being able to jump on Mr Bighead to regain dash and stamina.
. . . I think I sort of did this by accident sometimes and used it to skip certain jumps/dash I should do.
It is you dash and then press jump while holding up right after you touch the wall, so you go even higher using the dash momentum if you do it right?
In my experience giving up on a certain challenge leads up to beating it later. I don't remeber exactly which room it was, but it definetely was Chapter 4 B- or C-side - I got stuck on a certain level and decided that it's time for a break. But after about a month I came back to Celeste and, surprisingly, I beat that room on the second try.
Also I totally agree that Resort B- and C-sides are cancer.

I think my technique has a lower chance of success than yours though because I died countless times before clearing the level. Also, practicing jumping on Oshiro is kinda good because you're required to do that to catch one of the strawberries and to complete the C-side of Chapter 3.
I think it's that. I have to admit I'm not perfect with this technique. I often dash under or too far from the wall and I also tend to press the climb button instead of the jump button because of panic.
I must update here:
I had gone through the hearts gate at Chapter 9 and decided to continue and I already finished it without all B and C sides.
The "dash and then press jump while holding up right after you touch the wall, so you go even higher using the dash momentum" is required at least for the moon berry, that was the path I chosen because when I shut down the electricity I though I was supposed to go back but a real hell and completely infuriating part after that was waiting for me and after doing that I feel more confident to do the B and C sides.
But I still hate every parachute section there.
