I despised Chapter 3
Chapter 4 was my favourite
Mainly because the gimmicks reminded me of gimmicks from mario and mega man
And also because it got me hooked into the story
My least favorite is Chapter 4 Wind levels are extremely annoying to me. The Bounce Clouds are the thing I hate the most. I can't seem to get a consistant leap off of them. I'm surprised I got past B-side with those clouds. Moving Black Blocks were interesting.
Any chapter with wind is not (although I think I prefer 4B and 4C to 4A, probably because they're both shorter and I messed up the Full Clear on that one a bunch times by forgetting different strawberries every time (or even the mixtape a couple of times).
Worse B side is chapter 3
Worse chapter is probably 4
Best chapter is obiously Farewell, except 3 specific ♥♥♥♥♥♥♥♥ rooms
Least Favourite: Forsaken City (It's kinda boring)

68% completed chapter 2, Old Site
57% completed chapter 3, Celestial Resort
49% completed chapter 4, Golden Ridge
45% completed Mirror Temple
42% completed Reflection
40% completed The Summit
20% completed The Core
Unknown percent completed Farewell (I'm currently only about 2 serious screens in)
In other words, 24% gave up at chapter 1, 8% at chapter 2, 11% at chapter 3, 8% at chapter 4, 4% at chapter 5, 3% at chapter 6, 2% at The Summit.
So there's definitely a big dropoff between Old Site and Celestial Resort. Celestial Resort made many people give up. Golden Ridge also made many people give up. But after that, people mostly complete everything. Not everyone has the patience for unlocking The Core.
I found Celestial Resort the most frustrating by far. It was a big difficulty spike, and it reminds me of VVVVVVVV, which I gave up on about 70% way through. I don't find dodging very fast moving objects fun.
My favorites were 2 (Old Site), 5 (Mirror Temple) and the boss fight in 6. 8 plays okay, but it looks very videogamy with all these flying fireballs and pickups and doesn't resemble a real place at all. I didn't mind chapter 4 - yes, it feels like moving in molasses at times, but the upside is that it's more forgiving for reaction time. I loved the eerie floating blocks. The place is comfy and alien. I really liked poking around in the Mirror Temple, and the glitch art aesthetic. It's really well done from visual point of view. Dash shifting blocks were intriguing.
I'm not very good at these kinds of games. I never was. I loved Knytt Stories, which plays A LOT like Celeste in that it's superficially hard but you can restart very quickly, and checkpoints are almost everywhere. I liked the idea of Shovel Knight but found it frustrating, and the "you can continue but will not afford good gear, you loser" part made me feel miserable. I'd rather die 2300 times in a level. Eternal Daughter also looks nice, but plays very frustrating.
I completed only 2 B sides: chapter 2 and 3. The B side of chapter 1 looks brutal in an unforgiving, unfun way. Chapter 2 Bside had me launched around doing crazy things, things that looked impossible at first. Like I said I didn't mind chapter 4, so I got my fourth heart from Golden Ridge. It turns out The Core was easier than Golden Ridge B - took me only about one day.
I've played Celeste for 40 hours now. I currently have 2^^7 strawberries.
We had a conversation about this in another game forum recently. A lot of people (myself included) start games to try them out and either swap between games or even put them off until later (with the full intent of picking them back up sooner or later), and for the folks who get farther in, they might have other non-game related priorities in mind, or they might just need a break. (This is a moving target since it's not necessarily all the same people making up those percentages.)
It's not necessarily about difficulty or giving up. It's often about whatever the player is prioritizing in their lives (such as school or work responsibilities).
Whether someone's busy, frustrated, found a new shiny thing that takes their attention away, or whatever other possible reason out of the countless possibilities out there, it's silly to assume that the dominant reason is that the vast numbers players who don't yet have an achievement are somehow inferior to those who did get the achievement in question. Low completion numbers are a phenomenon observable for just about any game on Steam that has achievements.
Factor in that there are people using cheats to get achievements (in some cases without even trying to play the given game properly) and the numbers become even more unreliable.
I chose Golden Ridge for my 4th heart, but it was largely because I suspected it would be relatively easy. Here or on Reddit, almost no one calls Golden Ridge his favorite. Also, for most part I really like the ambience and the atmosphere of Celestial Resort, I just hate playing it (and consider Oshiro obnoxious). I really think the game would be better without the cutscenes I have to space through. I don't think Oshiro is an interesting character.
