You recover sanity by stopping to look at the creature, idols, etc. However, there's some permanent "damage" everytime you lose sanity. In short, the more you stare/become insane, the more frequently you'll lose sanity later.
In short: Staring is a bad thing and might harm you in the future, so try to avoid if possible.
Eh, it depends. Iker and Anne Marie can both afford to stare, even in the lategame. "Caboosing" the monster is a viable strategy with the right build.
