Their most recent patch said there's been a new trawling tutorial, but I'm not able to redo it, so I don't know if there's good information.
Seems like trawling is still "set it to the proper depth and afk for 30 minutes" since it's almost impossible to turn into a school before you pass it, even at a slow speed. (unless the tutorial explains it better than it did previously, which is possible)

IF you are in a school of fish AND at the correct door depth and no fish are filling up the boat, stop engines. Spool the lines out or in and see if you pick up a few fish that way.
IF you are in a huge school of fish, try raising and lowering the doors.0 kts. Full out or full in, but dont haul the net. You should show a few fish in the net on the catch sensors.
As of now, spooling the doors and depth control is wonky at best. For the Luna, try 110, 160, 220m LINE LENGTH, speed 3kts +/- 0.5. Hermes, I just spool out all the cables, speed 0.6kts and AFK for about 2 hours. Luna can steer a bit, but make sure the door distance doesnt close.
Hermes, steering at such a slow speed is pointless. Watch Youtube or Facebook on another monitor or Iphone to pass the time.
Luna trawling. As you see fish on your sonar sensor, you will notice they are grouped at a certain depth mostly with a few schools straggling above or below. Set your doors where they are just below the TOP arch of the fish school, watch speed very closely. The doors have to stay wide open, not narrow, AND they have to remain within the top 1/8th of the fish school. Dont chase fish around the 1/4 edge of the sonar screen. The doors will narrow too much. Most will swim to the center of the net anyhow. Depending on sea state, around 3kts is best.
Not realistic or using the tools and sensors correctly, but will catch fish. If you are in a school and not picking up a single fish, either the door depth is bugged out, or you are above the MOVING forward door depth. Stop boat, haul net, reset to previous length and THEN move the throttle forward to previous speed setting. Sometimes doors will 'pop' around, as if you hit a sea mine or whale or sunken ship :D If they resettle to the previous state, can troll on. If they float or are off the sonar or in a wonky position, gotta haul them up and reset them.

EDIT: After testing a bit, seems the doors do not have enough 'mass' or weight. They should function as downriggers (line length + speed) and also planar boards (speed only).
The downrigger function controls depth by means of how far the doors are down and also how fast your going.
The planar function of the doors is simply the angle to keep them spread apart. Strictly speed related only. Turning speeds up one door and slows the other down.
Seems the doors dont have enough weight to keep them down. However by game code, the net remains the same regardless of door position. But with the way the doors behave now in the 1.1.1 patch AND the hardcoded door depth limit, its very hard for most players to catch fish. There is too much fiddling with the throttle for minute speed control and constant spooling of the door cables. This is not realistic and is putting most players off of trawling now.
Remove the door limits? Add more door weight? I know the real life trolling answers but have no clue in game physics.
BTW devs, any possibility of getting say, inser\delete and page up\page down bound to door line length control? Or maybe the 7-1 9-3 Numpad keys? Would make life simpler in the future :)
also, make sure your net opening is what you're watching, not the door depth (other than minimum depth). sometimes the net opening is much deeper than the doors and so your net is completely missing the fish.
