Although in that game; my FPS stayed perfect within ceiling of 60fps and rarely wavered below 58fps (Even at x2). I know this is of no comfort to you; guess you need to see if you are above 'Recommended' Requirements for this game.
I do know it is now recommended not to continually use x5 or x10, for many reasons.
I expect the DEVs are looking into this speed option that has caused much contention with so many Systems out there unable to perform at those speeds. Again: This is a beta and this does happen, were an options works for many but then also ends up not working for the greater base; and as this base continues to ever grow...

If you are at borderline recommendations and useing MODs: Choose MODs that do not add extraneous stuff; example: more trees or extra drops to the map; resulting then with even more added stress to your V-Card and MEM; leading to low FPS/LAG and perhaps eventual MEM Failure resulting in crash/freeze
I select a large area of resources to collect.
The total amount of food nears 0, and villagers start scavenging around the village.
All storages reach maximum capacity, and villagers no longer find a place to store objects.
- " I have MODs but they should not interfere with game" I have heard this over and over...
And yet: those games are not playing as they would if playing Vanilla as it applies to FPS, LAG and MEM usage ;) As reported by a great many Players
Regarding new Structures: Should make no difference if you have a Lumberjack Lodge or a new Chopping Block 'residing in that space', for the most part same with other New Structures (As long as the 'Res Textures' and 'game action settings' are sensible and Author trusted)
At two hundred POP: Are all and every one of your Barns, Storage Units= Totally Full and can take no more, or Totally Empty of Food?
also Try not to repurpose too many Villagers for seasonal labor to far from Home; that may have to relocate and inadvertently displace other Villagers from there Homes, if Hostel/s not in place already for the new temp help.

Consider not using MODs and try this game for a good long while without MODs: In this way you will know what the Vanilla capabilities are; only then you are able to determine and troubleshoot
for >yourself, that particular MOD to Game symmetry; as it fits in YOUR mod collection Loadorder.
Also to consider:
Your Loadorder and that of Posting Players: MOD Loadorders, System Specs, etc.
are rarely, if ever the same

Also check your V-Card optional settings: Example: If the same Graphic options are set or to [enhance] for the V-Card and that of the game you are Playing, then your System may end up using redundant resources (Turning off redundant Options at V-Card [Game Management] may help a little; perhaps as much as 5fps)
And as important:
