A few issues to get around the farming if things are tight. As this game does not allow one to add extra farmers to a field during harvest (not sure why), one way to get around it is to make a field just large enough to have an additional person, in another words have the field near it lowest size for a number of farmer. So as you are making the field keep expanding it till you see the farmers go from one to two and keep it at two, so it is kind of over worked. 3 to 4 and so on. One can always pull a farmer off during weeding season.
Also, I have at times started harvesting early.
I have many max size 1 farmer fields and a handful of fields with more farmers that are at the lower end of the farmers quota. A good portion of my maxed out 1 farmers do not yield 100%, which i am find with, most of my fields with sizes at the lower end of the farmer quota for the most part will harvest in time.
