Kinda figured. That, sadly, really limits the towers if they're not close to a wall. Otherwise all they're good for is cleanup if something breaks through.
The ballista towers can do alot on their own, and even if you lose a worker every couple of waves in the end game, they are bound to take a couple of the bastards down with them.
The knight towers and bakery don't have anybody on them to lose, so they can give benefits in the late game long after they've served their usefulness, especially the knight tower as knights will bring their army back to another wall if the one they are at is about to break, amazing for multi-tiered wall defense.
The bakery you should only really need 1 of, you'll get a steady trickle of vagrants which will allow the outer camps to replenish automatically, very important for survival in the end game.
But if you don't have any hermits unlocked yet, don't build towers outside your main bases walls, it's just not cost effective.
