Where does it say that?
Nowhere. Then again, the same applies for all the other mechanics. This game won't explain itself, that's just how it works. But regarding the knight buff, it does work, like all the other known mechanics it was discovered by player experimentation. I can vouch for this one working. Try dropping a coin near one of your knights, he will walk towards it, collect the coin and raise his sword in the air, to show he has absorved it. Any other npc would give you the coin back if it had just collected it (except the banker), but the knight won't.
Ah...just noticed that when they get hit they lose a coin, so that makes sense now.
