I'm not seeing new content.

I'm on island 3 and apart from the new music and new stuff in island 1, I'm not seeing anything new in island 2 or 3 except for monuments. No dog either. When do I get to see more stuff?

It really depends on what you unlock. Replay the islands once you get past them, every signpost you unlock gets one unlock for that island (and there's one signpost for every game, if you have something to unlock on that island).

I have got every single signpost.

You've only gotten 2 signposts so far (you've gotten the one on the third realm, but you need to beat it or die to get the upgrade in the next game you play). And you've got the Archer statue and presumably the Builder Statue. Play through more games to get more unlocks. There's something like 13 total, many of them totally new (especially in the third, fourth, and fifth lands).

Yeah but you only get one unlock for each island( if you have the signpost). To get more you have to go on or when you die and have to restart an island and manage to get off it you will recieve another unlock.

Well i can say to you that you need to learn to play without the trader... On my third island he was just next to my kingdom with just one tree between them and on island 4 and 5 there is no trader at all.
