Is there a button to force drop the Baker/Hermit?
Its sucky that I can't make them get off my horse, and while riding around, they will randomly jump off in front of a minion wave.

Maybe I missed it, so it there a command/button that forces the Hermit/Baker to jump off?

Let me know if there is one. So far all I've found out is my hermit tends to leap off the horse if I go past one of my outer walls (the defended boarders).

you cant. unless he jumps off outside your walls at night or building something or gets stolen, oh well.

They don't randomly jump off as far as anyone knows. They only jump off at night outside your walls or if you switch with another hermit. A late game way to do it is to clear out one complete side of your map and then ride outside the wall on that side after dark. They'll jump off but theoretically be safe. I say theoretically, because they seem to disappear at random sometimes and I haven't figured out if it's a bug or something else I don't understand.

That's weird, cause I've had the baker sit on my horse for an entire two days before, then randomly hop off on the third.

I have had them in my castle and then randomly disappear. My tactic now is to just not purchase them on the map until I have a tower high enough level to upgrade. Then again I've brought them with me to a new map and had them vanish on the first day, too.
The hermits will jump off if they have been stuck riding with you after awhile.
Using warp portals also counts the distance travelled, so you might have them jump off almost right away after travelling through one.

How do I get the hermit off my horse?
It is so annoying that the hermit just jumps off my horse when it suits him. It can take everything from minutes to hours before he jumps off. It is at its most annoying when I want to recruit a new hermit to the base. Is it a trick to make him jump off, besides to build a tower?

That I know of, but for me does it take almost half an hour before he jumps off.

you just need to build a second wall (the wall need the flagg on it) after that he jumps off

Run by the outer wall at night.
When the stars align properly and if he feels like it, he'll jump off.
Alternatively, run from a group of enemies at a time where it would be the least convenient for him to jump off.

I had the same problem - my bakery was full, and i kept recruiting the vagrants before they reached the bakery, so the bread was never eaten. Once I let a vagrant go eat the bread, there was bread to be made, so the baker hopped off.

Hermit npcs gets off the horse in some situations seen in the guides, the easiest is to leave the base at night (maybe only with an existing enemy at night), although because the fact that they apparently disappear sometimes after a while off the horse currently, I prefer to leave it on the horse all the time and only take it off when necessary and then put it back on the horse again, after all, they travel on the boat too if he's on the horse.
