Multiple Hermits

I dunno if this is just me, but it seems the ONLY hermit I get is the baker. I've heard about people having multiple ones, but every time I get to a hermit shack and use my 4 coins it's just another baker. Which makes me question if it's up to chance and i've just had sucky results. Please help I wanna try out a Ballista+Knight combo

I've never gotten the same hermit twice in the same level. Every hut contains a different one. Only time I have hermit duplicates is when I brought one from the previous map.

As far as I know, you unlock hermits as you play. Once you unlock a hermit, it has a good chance of spawnign on other maps. If you unlock the baker, but not the other hermits, then the baker will be the only hermit you will get. I don't know how exactly you unlock things, if it is just random or if it's map based, but until you do unlock the other hermits, you will only get bakers.
