Why am I getting basically no coins?`
I got the double pack of these games and enjoyed the first Kingdom game. This one by comparison I seem to get no coins. I found a couple of chests in the forest but over a couple of days my farmers and hunters had nothing for me and my town didn't seem to be spawning any cash as it did in the first one. So while I made day 30 in the first before getting caught just outside town I made like 5 days in this one.

Where you letting Tall Grass grow when the grass spreads on the ground?
Tall Grass/Reeds is where rabbits spawn from, which means a easy source of money and quick source of money. So if you don't see any tall grass in your field touching your walls, then I recommend cutting down some trees.

I've noticed archers stop at the first gap where there is no potential Tall Grass to hunt rabbits in. So if there is a forest in between then the rabbits will spawn in that 1 safe area and prevent you from getting gold, as there seems to be a max limit of rabbits allowed on any map.

Might as well ask this, but do you mean after you hunted all the rabbits, they will not respawn?

They will respawn, but there seems to be a max limit of total rabbits on the map at any one time. Once your hunters kill some, more will spawn. You only run into trouble if your hunters can't reach the rabbits ;)

So keeping them to the edge of the map helps (the hunters that is)?
it is just a shame that the hunter will not go far from the wall, though replacing the grass with farm land might be a sign to move the wall.

Maybe I'm missing something but can Hunters be directly controlled? Or I'm meant to plan my walls better? Maybe I got lucky in my first run on the original game because I had no issues growing for the most part

The suffer from the same problem the knight does, in that they will not leave the confite zone, for the hunter, it is just outside the wall, the knight will stay in the wall and retreat the moment it gets comprised and will not help one bit.

The hunters cannot be controlled, however if you learn their behavior then you can maximize profits.

There are basically 2 ways of getting money: hunting (with archers); and farming (with farmers). In both cases you do not directly control any worker. You can only shape the environment that will block or potencialize their production. Both will only produce during the day and untill winter come.

1. Hunting
This is the quick way, but I find it's mechanics more complex, as you can hunt deers and rabbits, and each one has its own behavior and spawning rules. Archers in the Knight group don't hunt at all. Archers in towers hunt, but only if the animal approaches.

1.1. Rabbits
A rabbit only needs 1 hit to dye and drops 1 coin. They're not aware of danger. They spawn from the tall grass (bushes) which only grow in grass (no forest) and outside the walls. So if you have a large grass field, full of bushes and rabbits and if you build a wall after this field, all bushes will disappear and no rabbits will ever spawn there anymore.
Archers love to chase rabbits. If you prepare a field too extensive (larger than 3 screens distance), they may be caught by greeds at nightfall. So limit the field size by leaving trees uncut.

1.2. Deers
A deer needs 3 shots to be killed and drops 3 coins.They run away from you and from archers. They spawn in forests. Forest is every place between 2 or more trees, where you cannot find grass to feed your mount, and which is minimally large enough to create a darker environment even during the day.

There are basically to strategies for hunting them:
1.2.1. Outer-Wall facing the Jungle
Here your limit wall is just very near to a forest's edge. The archers will enter very shyly into the wood, killing only occasional deers coming to where they are. As deers need 3 successful shots to die, as they run every time they get hit, and as the archers won't chase them, you can imagine how hard is to make money this way.
1.2.2. Forest inside the walls
Here you have to leave the campfire, find a forest, pass this forest, and find a patch of grass where you can either build a wall or deforest until you get the spot to build the wall, always leaving a considerable wood land inside your walls. It's easier to do this in the first 3 days where only 2 greedlings will come from the portal(s) (you give them 2 coins); or after each blood moon, as you'll have one night without monster's wave. At the early-game is much more simple as you don't need to upgrade your new wall several times, and you don't have to wait a slow catapult to feel safe. With this layout archers will run through the entire forest, killing deers and collecting the coins. This is how I completed the achievement "On the Fourth Day We Had a Feast", having killed 20 deers before the 5th day.

2. Farming
Farming is the long term way, as you need to invest coins to obtain, after some time of farmers working, the financial feedback. You need to:
  • recruit villagers (1 coin each);
  • buy scythes to them (4 coins each); and
  • buid a farmland (3 coins for a water well + 8 coins for a mill house)

2.1. Water Well
The farmers will spend time walking from the village's campfire to the field at the morning and to go back at nightfall. If it is build outside the walls, it must be near (1,5 screen distance maximum) the outer wall, as farmers won't run fast enough to scape the greedlings.

2.2. Mill House
The farmers will rest at the farmland during night-time. This will spare the walking time to/from the campfire, increasing production. It should be built inside the walls.

Each farmland allows farmers to cultivate 6 plots. One farmer in one plot. Building towers and walls near the farmland may reduce the number of possible plots. Each plot will produce 6 coins after a day of work. So a Mill House with 6 farmers will cost 41 coins and may produce around 36 coins a day.
