For your weapons' dmg calculation:
Fists use (ATK+SPD)/2
Swords use ATK
Spears use ATK
Bows use (ATK+HIT)/2
Guns use HIT
Axes use ATK
Staves use ATK for direct attacks, which you probably won't use. It's utility is for spells, granting them +range, +area of effect, and +damage%
For general gameplay (most of these are intuitive):
HP is how much damage you can take
SP is how many resources you have to use abilities/spells
ATK is for physical dmg
INT is for magic dmg
HIT is for accuracy, how likely you are to hit your opponent
DEF is for reducing physical dmg
RES is for reducing magical dmg. It's also used to calculate how much you can heal with spells/abilities
SPD is for evasion, how likely the enemies are to "miss" you
Counter is how many times a char can perform counter attacks. It's not 100% chance. Attacking/using abilities uses 1 Counter, defending uses 2. Fist weapons increase the stat by 2.
MV (movement) is how far you can move
JM (jump) determines if a char can pass through certain terrain elevations or not
TW (throw) is how far that character can throw. For monsters, it's how far they'll bounce the char being tossed (need to be unlocked in Axel mode).
Resistances (fire/wind/ice %) determines how much a char is affected by elemental attacks. If it's a negative value, they'll receive more damage; if it's positive, they'll resist it by a certain amount. Also, something rare in disgaea games, it also affect spells (bot abilities) - a positive value in ice% will give a boost to ice spells (and its variants), while a negative value will decrease the damage done. Something to be aware of when using spellcasters (which you should).
