One would be that PSX games are easier to port than Saturn games by far. (It's a port, not emulation, although notably, Saturn -emulation- is also much harder.)
Two would be that the Saturn version doesn't support true transparency so some things look significantly worse.
Less importantly, the Saturn version's FMVs are way worse quality and blocky.
That said, it seems to just be common practice to port a PSX version over a Saturn version and sometimes the source code to the Saturn version of such games has even been lost, as is the case with the Saturn version of Castlevania: Symphony of the Night.
They did port the games, rather than just emulating them, but even then the porting job is quite direct and bare-bones. "New"/reproduced content is outside of the scope. (I wonder if they lost the original assets for the FMVs, though... It'd be actually pretty easy to improve them if they hadn't.)

Especially in an age now where retro games are a lot more accessible, these collections need more to diffirentiate themselves from being just simple roms.
Yeah its just Woodman and Cutman...but still.
MM 9 & 10 were not rereleased before this collection, it's more than just "a simple rom".
These aren't roms, they're actual ports.
And they offer quite a bit more than the original versions, including modes and added features that simply have never been available before.
Like Proto Man & Bass being able to fight against the MM Killers via Extra Challenges in MM10.
The extra stuff the ports have are the challenges, its the same for LLC1
No, Proto Man & Bass can NOT use the Mega Man Killer weapons or fight against them in the original release.
They still can’t use the weapons in this version anyhow..
bass and proto were playable in MM10.
what Mega Man Killer Weapons are you talking about?
In those, you fight Enker, Punk, and Ballade from the Game Boy Mega Man games.
If you defeat them as Mega Man, you can use their weapons in the main game.
Proto Man and Bass had no access to these Extra Stages, originally.
In this version, they can access those stages, but not the weapons.
