Just go in the properties settings of the game in the Steam library and turn off the Steam overlay. This solves the crash issue.
Found the solution here https://www.reddit.com/r/uboatgame/comments/14aklsl/what_the_hell_am_i_doing_wrong/ and tried it myself.
So disabling the overlay is a working workaround, but the real culprit must be a mod that really doesn't like that updated overlay, it seems...
It would be cool if those who had these crashes would post their mods list, to see which are common to everyone, and then the mods dev could be warned about this possible new bug.
Any help is appreciated.

Thanks.
I went in the top menu "Steam", then "Settings", then "Enable Steam Overlay While in Game" and enabled it.
Then I went to "Library", "Uboat", "Properties" and ticked off the option to "Enable the Steam Overlay While in Game"
Hope this helps!
I would deeply appreciate, if somebody willing to make a quick test of it would add me to friends on Steam.
I used to have my FPS popping up in the UBOAT launcher. Clicking off "steam overlay during gaming" solves it. lol
