Just do the patrol missions instead
It's also anticlimactic to send a submarine against destroyers and corvettes.
I got the cutscreen for waiting in the harbor for two days and after it was done, I had completed my norwegian escort mission, because they went without me and totally nailed it. Ez win for the Kriegsmarine
I finished the Norwegian campaign doing all but 1 of the missions as escort missions in a type IID.
The important thing to realise is that the missions aren't fixed pre-designed missions.... they're random.
The only thing constant is where your convoy starts and where it's going. The enemy that will engage the convoy each mission on the other hand is completely and utterly random.
Sometimes you'll not get a single enemy warship engage the convoy, other times you'll get two different fleets that if you don't spot and deal with ahead of time could potentially end up hitting your convoy close to the same time, and others you'll get a lone ship followed by later a larger fleet.
It really can be anything.
Hardest thing I encountered in mine was a fleet of 3 destroyers and 4 corvettes that arrived late into the route after having already dealt with some corvettes previously that were pushing for the convoy earlier on in the mission, meaning I only had 3 torpedoes left.
What I ended up doing in that situation was just targeting the destroyers, sinking 1 of them, crippling the 2nd and missing the 3rd. I then played decoy and let what was left of them chase me rather than have them attack the convoy, which worked for all of them except one corvette that pushed through to the convoy but got quickly sunk by the defending destroyers.

1. Dont intercept the attacking force too early, because then there's time for a second force to spawn
2. Make sure to torpedo the destroyers first. The convoy itself can handle the corvettes easily in case you miss them, but destroyer have far more guns...
3. After the first convoy escort mission, go for the patrols. The next convoy missions are really difficult
4. If you time it right, you can finish the 3 atlantic missions (giving you the second blueprint) and then finish the 6 norwegian missions in the VIIB.
Again... the convoy missions are 100% random.
So no the 2nd convoy mission is not "Very difficult".... because it's random.
Completely and utterly random.
My first convoy mission was some early single corvettes, followed by a fleet of 3 destroyers and 4 corvettes altogether.
My second convoy mission had no enemy whatsoever.
Third was a small enemy fleet of 3 corvettes.
And so on.
None of these convoy missions are pre-scripted missions the developers hand made.... they just set variable conditions of what might spawn and then let the mission system random roll what you actually get.
Also, hitting the enemy early doesn't give any more chance for more enemy to spawn, the mission has already decided once you set off what enemy will attack and from where. Killing enemy earlier or later changes nothing.
I did my first one yesterday and after my presence was known just kind of stirred away into the ocean to the west (instead of setting course for home) and aside from 19 airplanes I sighted that were not able to spot me (because I was submerged) I encountered a single destroyer/corvette that wasn't alerted to my presence either.
So I don't know if they patched it or if I just slipped through a whole, but my experience was pretty fine.
I can´t tell if they are random but at least my missions were pretty different.
The first escort was pretty straight forward and easy (had to sink two corvettes and two destroyers in two seperate groups).
The second and third escort missions were extremely different and demanding. At one point one destroyer and a corvette managed to get to the convoy and they damaged two of the cargo ships. They still managed to make it to the port and i completed the mission.
It´s not my favourite mission design by far but i really like how the missions are different from one another and you have to adapt.
