TDC TESTING [BUGS] / FUNCTIONALITY
This will be updated [UPDATE: I GOT THINGS WRONG] as I do more tests. I am not an expert, I have just got my information from listening to others that I consider experts. So I don’t claim to be infallible, and please correct me if I am wrong :)

TL;DR:
TO MY UNDERSTANDING, BOTH THE C/37 AND S3 ARE WORKING HISTORICALLY PERFECTLY (BAR DEPTH SETTING BUG), AND BETTER / MORE ACCURATELY THAN ANY PREVIOUS SUBSIM.
IT WOULD JUST BE NICE TO HAVE A (UN)COUPLE / (UN)FOLLOW BUTTON ON THE OPTICS SCREEN AND FOR THE LEVER ON THE TDC TO STAY IN THE POSITION YOU PUT IT WHEN YOU TRANSITION TO A DIFFERENT VIEW.

Using perfect map tools (to verify data) / pause (to record perfect data) and 3;15 method, on a clear day (wind 2kn – Calm weather cheat) the target speed varied (got progressively slower: 8:70 – 7:33) and levelled off at 7 .3kn.
Is this behaviour always true? Targets slow to 7kn the closer player approaches? More testing needed.

TARGET LOCKED FUNCTIONALITY using attack periscope. Unpaused to allow TDC cogs to move and update automatically. [UNLOCKED seems to be working as intended, but you cannot track targets or link the optic to the TDC in optics view]

If going for a 0 degree giro shot you must keep you sub moving or its course will be deflected by the waves. This is intended behaviour.

Single shot, no salvo tested. “Torpedo fire control boxes” and “Bow torpedo launcher” untouched / default.

You must enter information in order, speed always first. If you change speed after AOB the settings will be wrong. This is intended behaviour and how the TDC functioned.

[BUG] Depth setting must be set just before you fire because it gradually depreciates. I assume this is a bug. Historically the Depth setting was set first.

EDIT: NOT A BUG BUT A FEATURE OF THE C/37! IT DID NOT HAVE THE ABILITY TO AUTO UPDATE AOB!:
You must relay verbally (speech bubble) the AOB just before the shot. I believe this may be causing a lot of the problems for people. Historically the when the optics were moved AWAY FROM THE TARGET, they were disconnected from the TDC. You can simulate this by UNLOCKING from the target. The “target bearing” outer (red) dial would stop and the inner one continue to adjust. When the optics we’re coupled again, these would synchronize. This is simulated here by relocking the target. However in LOCKED mode the periscope is always coupled and if you go to the TDC you can see everything updating automatically. So to get to the POSSIBLE BUG [EDIT: NOT A BUG], why would you need to verbally communicate the updated AOB at the last minute? The AOB is updating INCORRECTLY. You can see the “torpedo data console (the grey box representation of tdc in periscope view)” updates correctly but the TDC VIEW AOB DOES NOT. It very slowly turns (not nearly enough) but and in the wrong direction as if set to the wrong side. That is why you must verbally update the AOB that has been automatically updating on the “torpedo data console (grey box in periscope view)”

UNLOCKED MODE [SEEMS TO BE WORKING WELL except that you cant link the TDC in periscope view, so you cant track the target]

IMPROVEMENTS / SUGGESTIONS:

There should be an UNCOUPLE / COUPLE button in periscope view for when in TARGET LOCKED MODE or TARGET UNLOCKED MODE. The person operating the optics historically could communicate this to the TDC operator.

The condition we leave it in (coupled or uncoupled) should be permanent even when we transition views (from optics to TDC etc).

[NICE TO HAVE] There should be a GIRO angle indicator in optics view, or it should be verbally communicated to us.

S3 also has similar AOB disc behavior when the AOB motor is (by default) turned off. Just a kind reminder here that this motor is at the bottom right and should be turned on for correct AOB following.

It's also so awesome that the spring loaded tab (that's incorrect on mod version) moves when you change AOB, so the course delta / angle dials aren't messed up - as if the operator is temporally deactivating track whilst the cogs turn! ;)

The S3 also feels like a massive upgrade, and a reason to go from the 7b to 7c
I concur with Tequilatibbs findings - the one quirk is that the FOLGEN/NICHT FOLGEN lever (on the right/bottom box) does not stay in the selected position when changing views.
Historically this would only get moved to the "FOLGEN" position when actually making a shot (not swiveling around to search for targets) as in that position the torpedo gyro angle (the path the torp will actually travel on) is updated continuously and it will take a second for the cogs and gears to settle into the solution (DECKUNG).
I think that the "locking" to target is just so wrong in so many ways from a purist point of view, but in fully realistic mode one is actually doing two jobs and once and pausing the game to enter values on the TDC dials is acceptable, imho.
