Btw I like the sound of the breaking frames and the pressured air that blows out windows and hatches. That's what I want to her in game as well.

Sometimes within a minute. Mostly about 5 - 10 minutes. In rare cases they would stay afloat and may sink an hour later. You could wait or force them to sink quicker with another torpedo or artillery of course.
But in vanilla they sink way too fast, so fast sinking can happen in real world but it would be rare case.
Though SPO is not so much about how fast they sink, it is about how they do it. They can capsize, flip over, rearing up like the titanic. See screenshots.
Stellar Banner btw is not a good example. It was actually sinking the whole day already before this video starts. It was pulled for hours towards shallow waters while it was sinking. It was loaded with 300 tons of iron ore, that explains its fast diving when the hull broke. In SPO ships that hull breaks will dive so quickly too.
You linked a video of an intentionally scuttled ship. That's not really relevant.
Of course it's possible for ships to go down fast. It's also possible they'll limp along for 3 days before finally going down. The reality is not every ship just drops like a solid brick of steel - particularly warships. It shouldn't be difficult to understand why people might prefer something a little more varied.
Other than whack-a-mole arcade (which current physics is) what is it you wish to do with the game exactly? :D
But panzerd18 says it bothers him when a ship sinks too fast. He doesn't want to see that in the game. I just wanted to say that ships can sink that fast, sometimes in a few minutes, especially if they are heavily loaded or their keel was shattered by torpedo hit with magnet warhead. What I expect from the game (or SPO2😉) is a wide variety of sinking behavior and sinking speed. I want ships that sink like a stone. But I also want ships that roll over when sinking or that they sink bowwards or over the stern. The whole range of possible sinking behavior.
My biggest wish would be that the cargo have a certain influence on the sinking behavior of a ship. That would be really nice.
I use the TDC, DEM, Iron Coffins but realistic sinking? Nah, ain't for me.
This one was hit near the bow. It got heavy list and after few minutes was abandoned, then it reared up and will dive in about 20 seconds.

im good with the forces, now adding some old and some new features.
Old:
Crew stops the engines, when the ship becomes listed too much.
New:
The hull will not break by direct torpedo hit.
Instead when the ship rears up like titanic and is pitching over the bow at 40°-70° angles, there is a chance that the hull will break in two from stress (like the titanic). This is ready.
Perhaps i will try to allow hull breaking with torpedos exploding under the keel with magnetic detonators so that they actually become useful. This is not ready yet.
