If the player only purchases a specific type of torpedo, eventually the warehouse will fill up with everything but the torpedo you want. You'll just have to bite the bullet and buy torpedoes you don't want to free up more space in the warehouse for torpedoes that you do want to spawn.
Or just get the Easier Resupply mod.
If your concern is the higher prize coming with FAT/LUT versions, that shouldn't be a problem over the coming years, even with the skyrocketing prizes in 1945 and later. You should have build up a sufficient amount of credits by then to get you through it.
How do you set the running distance? I use the TDC mod.
I may go with what McDewgle said, and just buy all the other torpedoes and fire them off.
Lastly, should I be using FAT/LUT and I don't know it? I don't ambush big convoys all that often.
The T1 steam-propelled torpedo is the only torpedo capable of a running speed up to 44 knots. Great for reducing your chance of a miss as a faster torpedo doesn't need to 'lead' the target as much.
Pi1 pistols require a low impact angle of 90° to 130° or 90° to 50° depending on how you measure it. Usage of the magnetic detonator on the Pi1 and Pi1.1 is not recommended.
T2 torpedoes (and above) don't leave a wake which allows you to use them during day attacks with reduced chance of being spotted.
Pi2 pistols and above have more forgiving impact angle detonations and more reliable magnetic detonators.
FAT/LUT torpedoes should be treated like any regular torpedo. Their purpose is that in case you MISS that it will not be a completely waste of a torpedo. After a miss the torpedo will run the specified (by you) distance before it performs a preset zig-zag pattern as it attempts to smack into something like a blind man stumbling around in a strip club.
FAT/LUT torpedoes do not have any 'homing' capabilities. They are still an un-guided weapon. But they have the benefit of performing a zig-zag pattern which increases the chance of them randomly hitting something, especially in large convoys should you accidentally miss the first shot.
FAT torpedoes just require that you set the running distance.
LUT torpedoes require you set the running distance and the true course of your intended target. The compass navigation mod is recommended if you're going to attempt to use the LUT torpedo as the CN mod adds TRUE bearings to all your map tools.
Please let me know if you do not understand the difference between relative and true bearings.
When you're completely out of torpedos fill the first 5 (4 front/1 rear) slots with torpedos you want to have. When these are loaded you can simply buy the next 9 torpedos to empty the resupply's storage. Then sell those you don't want and buy those you want of the 'respawned' supply.
I don't know if you have any revealing info through TDC on your current tubed torpedos. If you do, you'll see when you miss a target and the torpedo suddenly changes direction and does the mentioned zig-zag course.

The only thing I don't understand is how to set the fat/lut torpedoes so that i can make at least a 3 km torp shot before they start doing their crazy zig zag stuff.
Adding an additional 100 meters couldn't hurt.
This will cause the warehouse to fill those eight slots with new torpedoes.
Usually , this will give me about two or three of the torpedoes that I’m trying to get. ( T3 ), with the next visit.
Buy other items, deck ammo, wait five days to load, repeat.
Now, just keep swapping some of the eight random torpedoes for the ones that you want. Goes faster this way.
