U-Boot classes and variants
I haven't had time recently to properly sit down and really feel out the game, but I'd like to know if we have access to multiple classes and/or variants of U-Boot other than the Type VII (fairly confident it's a Type VII at least) we have now.

Even within the Type VII class there were myriad variants for everything from minelaying to flak barge-ing, let alone the various U-Boot classes from WWI to the end of WWII. The 3 most famous are by far the Type VII, Type IX, and Type XXI Elektroboot... But there's also the Type I, Type II, Type V, Type XVII, Type XXIII, and the Type XXVII midgets. And that's just the ones that were actually built AFAIK.

Then there's the neat design concepts like:
Type VI steam powered (surfaced and submerged, closed loop turbine)
Type VIIE deep-diving model
Type XI submersible artillery platform (4'650 ton displacement, 2x2 128mm gun turrets, Ar-231 floatplane launch and recovery systems)
Type XII (a "super" Type IXD with improved engines and high speeds)
Type XIII (a "super" Type II)
Type XVIII (Air Independent Propulsion capable with the Walther propulsion system)
Type XXII (12-man AIP Walther engine coastal boat, a "super" Type XIII effectively)
Type XXIV (Ocean-rated AIP Walther boat, 14(!) tubes 6 fore/8 aft)
Type XXV (fully electric coastal boat)
Type XXVI (high-speed ocean-rated AIP Walther boat, no deck gun and 6 "Schnee Organ" tubes)

And the various support and logistic classes, such as the Type VIIF, Type IXD1, Type X, Type XIV, and planned Type XX. Which could open another avenue of play, trying to do the incredibly dangerous job of commanding a resupply/transport submarine. It was even more dangerous than standard U-Boot duty, somehow.

No.

The game still needs a lot of development work, it's not even stable or cannot be loaded for a lot of people. Adding features is currently secondary right now and adding different boats is probably very very low on the priority list.

Currently you have a type VIIC only. I'm sure a type IX will be added at some point down the line but it's quite a way off.
